Water
Your finished cup is over 98 percent water, and water chemistry shows up in the glass. Chlorinated tap water mutes aroma outright; very hard water dulls delicate teas and can leave a filmy skin on the surface of black tea, the scum familiar to drinkers in hard-water cities. At the other extreme, distilled or reverse-osmosis water with no minerals at all tastes hollow and flat. The practical target most tea professionals recommend is moderately soft water — roughly 50 to 150 ppm of total dissolved solids — freshly drawn and carbon-filtered. - Start with freshly drawn, filtered water. Fill the kettle from the tap or filter jug each time rather than re-boiling what sat in it overnight; industry tasters have long advised fresh water for livelier flavor.
- Weigh the leaf. Measure 1g per 100ml of water. A teaspoon of dense, rolled oolong pellets can weigh two to three times as much as a teaspoon of airy silver needle, which is why spoon-measured cups swing so wildly.
- Heat the water to the class temperature. Use the chart below. Without a variable kettle, boil, take the lid off and let it rest — a few minutes brings a full kettle down toward the 80°C range — or pour the water once into a spare vessel, which sheds roughly 10°C per transfer.
- Preheat the brewing vessel. Swirl a splash of hot water in the pot or cup and discard it. Pouring correctly heated water into cold porcelain can drag the actual brew temperature down by around 10°C, quietly undoing step 3.

- Buy the scale before you buy more tea. A 0.1g pocket scale costs less than most tins and improves every cup you brew for years.

Gongfu brewing
The traditional Chinese method inverts the western formula: 5 to 7 grams per 100ml in a small gaiwan or clay pot, steeps counted in seconds, and five to eight or more infusions from the same leaf, each one a slightly different chapter of the tea. Cold brewing is the same extraction science run in reverse: cold water pulls caffeine and catechins far more slowly, so the result is sweeter and rounder with no bitterness to manage. Use about 10g of leaf per litre of filtered water in the refrigerator — roughly 2 to 4 hours for green and white teas, 4 to 8 for oolong, 8 to 12 for black and herbal — then strain the leaf out and drink within a few days. Whisked tea
